Get on with it…
Gently heat 50g unsalted butter with 2 tablespoons olive oil (Virgin’s always best) in a large heavy based frying pan. Add in 50g shallots, finely chopped and sauté for 3-4 minutes until softened, then add in 2 cloves garlic, finely chopped and cook for a further 3-4 minutes. Cast in 8 giant prawns, raw with their shells on, together with 1 tablespoon sweet chilli sauce and 2 teaspoons light soy sauce. Sauté the prawns for 3-4 minutes on each side until they are bright pink all over and cooked through then finally strew with a handful of chopped flatleaf parsley. Pile onto a platter and prepare to undress… the prawns.
